这是我简化版本的水煮牛肉片。一大盆菜大约前后25分钟可以完成,肉和蔬菜都有了。一菜搞定整个一顿饭。

通常我是选用 Rib Eye Steak 冰冻带一点冰渣时切薄片,然后用椒盐、白胡椒粉、姜汁、一勺白酒、一个鸡蛋清、质量好一点的淀粉码好抓匀备用。

先烧半锅开水,把白菜洗干净切长条放进去煮熟,连菜带水全部倒入盆中。

锅内放一点菜油和两勺火锅底料、姜片、葱段、花椒粒小火炒香。

把煮白菜的水又倒回油锅里,用刚才煮白菜的水来煮牛肉好处多多,一是蔬菜水有营养,二是蔬菜水温度还是很高的,节约时间。如果家里有骨头汤当然更好,直接用骨头汤代替水会更好吃啦。

倒入腌好的牛肉片,大火快速煮开,轻轻划开牛肉片,不要使劲拨动。刚才提到建议使用质量好的淀粉这时候就能见分晓了。好淀粉是附在牛肉上让牛肉很嫩,不好的淀粉是散在汤里,让汤糊糊的口感和菜成色也就差了很多。

几分钟后把煮好的牛肉倒在煮好的白菜上面,肉不宜久煮以防肉太老。上面放一些花椒粉,辣椒粉,熟芝麻和葱花或者香菜,数量根据各人口味自定。
锅内烧热少量油,看见冒烟很烫关火。

把热油泼在上面,我听听声音闻闻香味不吃都很满足了。
